Ingredients

  • 1/2 cup Friendship Dairies cottage cheese
  • 1 tbsp. cilantro, chopped
  • 1 tbsp. mint, chopped
  • 1/4 cup cucumber, finely diced
  • 1/4 cup carrot, finely diced
  • 3 oz. grilled chicken breast, cubed
  • 1 tbsp. peanut sauce
  • 1 tbsp. sesame seeds
  • 1 tbsp. crushed peanuts
  • Mint and cilantro leaves for garnish

Directions

  1. Mix the chopped cilantro, mint, cucumber and carrots into the cottage cheese. Top with grilled chicken, peanut sauce, sesame seeds, crushed peanuts, mint and cilantro leaves.
  2. Can't find peanut sauce? Simply dilute crunchy peanut butter with soy sauce, rice vinegar, a few drops of water and canola oil.
