Ingredients

  • 1 cup Friendship Dairies cottage cheese
  • 2 tbsp. chili pepper sauce
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 1/4 cup finely chopped cilantro - reserve 2 tbsp. for garnish
  • 3 tbsp. olive oil
  • 1 16 oz. can refried beans
  • 1 cup coarsely grated shredded cheddar cheese
  • 2 small tomatoes, seeded and diced
  • 1/2 red onion, finely diced
  • 1/4 cup black olives
  • 1 small jalapeño, seeded and finely diced
  • Juice of one lime
  • Tortilla chips

Directions

  1. Place the cottage cheese, chili pepper sauce, salt and pepper, cilantro, and olive oil in the food processor and blend until smooth.
  2. In a serving dish, layer the refried beans, the cottage cheese mixture, the cheddar cheese, the diced tomatoes, red onions, black olives and jalapeños. Squeeze the lime all over the dish, garnish with cilantro and serve with tortilla chips.

You may want a bigger spoon.
