Ingredients

  • 1/2 cup Friendship Dairies™ cottage cheese
  • 1 and 1/2 cups baby spinach
  • 1/2 medium roasted sweet potato, sliced
  • 1/4 cup blueberries
  • 1/4 cup prepared black or brown rice
  • 1 tbsp. pistachios, shelled
  • 1 lemon wedge, for serving

Directions

  1. Place spinach in large bowl.
  2. Top with sweet potato, cottage cheese, blueberries, rice and pistachios.
  3. Serve with lemon wedge.
