Farmer Cheese was the first product Friendship Dairies, Inc. manufactured more than 90 years ago. Farmer cheese is an Old World style, fresh, pressed curd cheese made from Cultured Pasteurized Grade A Skim Milk, Cream and Salt. Farmer Cheese is relatively low in fat, containing approximately 2.5 grams of fat per one ounce of cheese.
Today, many people must watch their diets due to certain digestive conditions and/ or an aversion to lactose. Farmer Cheese is very low in lactose. This is important for people with restricted diets who still crave dairy products and cheese. In fact, some "intestinal health experts" recommend Dry Curd Cheese for those suffering from digestive conditions such as Crohn's Disease, Colitis, Diverticulitis and Celiac Disease.
Good Things That Come in Little Packages
Farmer Cheese has a mild, delicate milk taste, and a texture that is moist, yet dry enough to be sliced. Due to the delicate consistency of the cheese, the packaging is very important. It must protect the product’s texture and moisture.
Approximately 15 years ago, many major manufacturers of cultured dairy products made farmer cheese. The manufacturing process and the packaging was labor intensive, a very costly process especially with the growing use of automated technology. Yet, there was no guarantee that farmer cheese could be automated without losing the taste and consistency that makes it so appealing. For that reason, most companies stopped manufacturing the product. Realizing that there was still a great demand for the farmer cheese, Friendship invested in developing a package and an effective packaging system that still delivered the same "homemade" quality of farmer cheese.
Today, Friendship is the only major manufacturer of cultured dairy products to make farmer cheese. The packaging the company developed has allowed them to expand the distribution of farmer cheese as far away as the West Coast.
The Many Uses of Farmer Cheese
Many consumers are unaware of the variety of uses for Friendship Farmer Cheese. By simply adding thise cheese to any food, a new, delicious taste is created.
Use farmer cheese in place of ricotta in lasagna or stuffed shells, or on pizza-basically anywhere in a recipe where a white cheese is called for. Mix it with minced green olives and pimento for a tasty dip or cracker spread. The cheese can be used in baked desserts, or mixed with fresh fruit for a cool, refreshing salad. Also, try it simply as a spread on a bagel for a low-calorie alternative to cream cheese. Farmer Cheese can also be used in cheese cakes, in omelets, in blintzes, crumbled over salads, sliced in sandwiches, or eaten alone.
