Mexican Shrimp Bowl

Ingredients

  • 1/2 cup Friendship Dairies cottage cheese
  • 1 tbsp. mint, chopped
  • 1 tbsp. cilantro, chopped
  • 1/4 cup cucumber, finely diced
  • 4 large cooked shrimp, chopped
  • 1 small tomato, chopped, seeds removed
  • 1 tbsp. red onion, finely diced
  • Salt and pepper to taste
For the vinaigrette, mix together:
  • 1/2 cup olive oil
  • 2 tbsp. chipotle sauce
  • 3 tbsp. white balsamic vinegar
  • Season with salt and cracked pepper to taste.

Directions

  1. Mix the mint, cilantro and cucumber into the cottage cheese. Top with shrimp, tomato and onion. Drizzle with 1 tbsp. of chipotle vinaigrette. Finish with more herbs and salt and pepper.
